Heart healthy watermelon salad with grilled red capsicum, cherry tomatoes and mint

This antioxidant rich salad contains hydrating watermelon and lycopene rich tomatoes and capsicum. Lycopene is a phytochemical found in vegetables and fruit such as capsicum, tomatoes, watermelon, red cabbage and papaya. While delicious raw, cooking vegetables containing lycopene such as capsicum and tomatoes increases the disease fighting phytochemical significantly. To make this salad a meal add some healthy fat and protein! Good choices include toasted hazelnuts, cooked chickpeas or omega 3 containing salmon.

Heart healthy watermelon salad with grilled red capsicum, cherry tomatoes and mint

  • ¼ watermelon (cut into cubes)
  • 1 red capsicum (deseeded and ribbed, cut into slices)
  • 1 punnet of cherry tomatoes (cut in half)
  • Small handful of mint leaves (torn)
  • Olive oil to drizzle
  • Juice of half a lemon
  • Salt and pepper to taste
  • Feta (optional)
  1. Slice ¼ of a watermelon into large cubes and place in a salad bowl
  2. Heat a grill over a low to medium heat, drizzle with olive oil and place your sliced capsicum and tomatoes on the grill. Grill until tender crisp and place in a bowl to cool.
  3. Once the vegetables have cooled slightly, add them to your salad bowl with your watermelon cubes. Shred or tear a handful of mint and add to your salad bowl.
  4. Drizzle with olive oil, squeeze with lemon and add salt and pepper to taste. Add your protein of choice!
